Honey Lemon Chicken

It’s lunchtime somewhere, so I thought I’d post my quick and simple Honey Lemon Chicken recipe.

I come across a recipe on the Food and Wine website, and decided to add to/alter it.

Overall, this recipe took 25 minutes to make.

Ingredients you’ll need

🌟 Two chicken breasts

🌟 1/4 cup and 1 teaspoon of honey

🌟 2 tablespoons and 1 teaspoon fresh lemon juice

🌟 2 tablespoons soy sauce

🌟 A dash of salt

🌟 Teaspoon of garlic powder

🌟 Teaspoon of onion powder

🌟 Fresh Rosemary sprigs

🌟 Tablespoon of Baj’s Blazin’ Hot Sauce – Mama’s Mango

How to make Honey Lemon Chicken

Start by washing the chicken.

Then, transfer the chicken into a medium or large bowl, before adding the fresh rosemary sprigs, honey, mango sauce, lemon juice, soy sauce and dry ingredients (garlic and onion powders, plus the dash of salt).

Once done, pierce the chicken all over for extra succulence (I used a standard cutlery knife) and to soak up the marinade.

At this stage, you could either set them aside, or start grilling straight away.

When you’re ready to cook, pop the pan on (unless you’re planning to grill them on a barbecue), pour a bit of oil in the pan and heat it up before adding the chicken.

Then, pop the chicken in, followed by the marinade – don’t let any of the good stuff go to waste!

Once done, reduce the heat from high to medium, and leave the chicken to cook in its juices for 10 minutes.

10 minutes later, flip the meat over and leave them for another 10.

Now, reduce the heat to low, and pop the lid on – this is to preserve the flavour, and vaporise the marinade. 5 minutes on each side should do the trick.

By now, you’ll be ready to plate up! I served it with salad leaves, beetroot and jalapeños, but you can choose to serve it with whatever you’d like.

If you want go all out and make a full two course meal of it, you could follow up with an Oykos Greek-style yogurt.
